Koshary Cravings

A celebration of the carbohydrate in all of its forms, koshary is a staple of Egyptian cuisine. Layers of rice, macaroni, and stewed lentils are buried in fried onions and a vinegary pepper sauce. A humble yet satisfying dish, it was a comforting evocation of Monday lunches at my elementary school in Maadi, Egypt. I was so excited to eat that my photos are rather blurry, but none of that matters because KOSHARY.
